Spring Mountain Vineyard

Spring Mountain prefers to pick grapes in the morning so that the grapes arrive at the winery at cool temperatures. For white wines this reduces phenolic extraction during pressing. For reds this brings the grape in at temperatures closer to the cold soaking hold temperature and it reduces the potential for early microbiological activity.

The grapes are picked by hand in 40 # plastic bins and carried to trailers holding two 1/2-ton plastic bins.
