Spring Mountain came up with an innovative design that gives them 65% utilization of the floor. It does this by creating wide storage bays where aisles are only two feet wide. These are accessed through connecting tunnels where barrels are stored in a similar manner to most wine caves. This also makes for a compact layout and reduces the distance wine and barrels need to be transported.
The layout is pictured below. The arrows indicate the slope of the floor at the intersections where the barrels will be cleaned and cared for.
